September 8th 2005 Today’s consumer is more educated and aware regarding the foods they choose to eat. Allergic reactions to peanuts and peanut products have been widely known for several years. Schools ban peanut products in students’ lunch bags. Fear of even minute amounts of peanut residue can cause severe harm or even death to people affected by the symptoms of anaphylaxis. Households with family members suffering from food allergies must diligent about how food is prepared in their homes. But what about other
food allergies we need to be aware of? How many are there? How do food
processors ensure the consumers’ safety when they process multiple
products often from the same line. What are the systems processors use
to product all of us as consumers. Come out and listen to Anthony explain what food allergens are, and how food processors establish systems for their control.
